Gallberry Honey: Gallberry is a small evergreen shrub in the holly family also known as Inkberry. It is highly prized as a honey source due to its resistance to granulation*, delicious flavor and light color. Both honeys offered are raw, which means it is unheated and unblended; retaining its beneficial properties.

*Granulation is the crystallization of pure honey which is hastened by refrigeration and by certain honey sources.
